Sesame seeds may be the oldest condiment known to man dating back to as early as 1600 BC. Sesame Seeds are a source of protein, manganese, copper, magnesium, fiber, iron, phosphorus, and calcium.
The small, flat and ovular seeds have a slightly nutty flavor that is favored in many international cuisines, particularly asian cuisine. Sesame seed oil is prized for it’s high heat resistance and also it’s resistance to rancidity.
Remember the term “open sesame?” It comes from the process of the seed’s bursting open when reaching maturity, exposing the seed for consumption.
Sesame seeds contain two substances called “sesamin” and “sesamolin.” These substances are part of a beneficial fibrous group of lignans, which may help to lower cholesterol. They also contain beneficial phytosterol compounds.
Sesame seeds can be used to make delicious, raw sesame seed milk for uses in raw milkshakes, smoothies, puddings and desserts. They are a wonderful addition to raw chocolate also.
Sesame seeds that a ground into a paste is known as tahini. Tahini can be used in raw vegan wraps, sandwiches, salads, desserts and more. You can also create a delicious raw halvah with raw tahini. You can also make raw sesame milk which can be a great base for a superfood smoothie.
