ORGANIC PUMPKIN SEEDS
Pumpkin seeds, also known as Pepitas, are a Native American favorite. Native American revered them for their nutritional abundance. They are also favored in many traditional Mexican cuisine recipes.
If they still remain in their husk, they will resemble an off white color, however, once the husk is removed the actual seeds usually range in color from light to dark green, are ovular and have a rich and nutty taste.
They are a source of naturally occurring minerals including magnesium, iron, and zinc. They are also a source of protein and healthy fats. Pumpkin seeds are considered to be one of the most nutritious seeds available and are a staple in many raw vegan diets. They go great in raw food trail mixes and superfood creations.
When the Fall season rolls around, why not try utilizing all of the pumpkin? Simply scoop out the seeds and rinse thoroughly until all of the gooey, stringy flesh has been removed from the seeds. Next, you can salt them and spice them any way you like, sweet or savory.
If you have a dehydrator, great! Set it on a low temperature, around 116 degrees and lay out the seeds on a dehydration tray. Let them dehydrate for about 8-10 hours, overnight. If you do not have a dehydrator, not to worry!
You can let them sun dry if you have a nice, warm and sunny place to put them OR you can place them in the oven on the lowest setting possible.
Pumpkin seeds can also be delicious made into a delicious raw pumpkin seed butter! Not sure how do to this? Well, the easy solution is buy one at your local health food store. You may also want to try pumpkin seeds oil. It can be used in smoothies, creating an almost peanut-buttery type flavor and as a delicious drizzle on top of raw salads amongst other superfood creations. Pumpkin seeds go naturally with raw chocolate, adding a delightful crunchy texture.
