Cordyceps, also commonly called “caterpillar fungus,” is known as the Chinese Longevity Mushroom.  It was discovered by the ancient Chinese about 1,500 years ago.  After witnessing sheep grazing on the fungus, they noticed that the sheep tended to live longer, stronger and healthier.

Cordyceps are quite an interesting fungus.  In fact, the process of which the fungus grows is arguably one of its most interesting aspects!  

Cordyceps typically grown on a host, particularly caterpillars, which is how the fungus got it’s unique nickname.  When the Cordyceps fungus attacks it’s host, it invades the host’s tissues, essentially replacing it with it’s own and eventually taking it over entirely with a long, tubular like form.  The fungus itself, resembles that of a caterpillar.  

Organic Cordyceps can be found growing wildly in the highlands or Nepal, China and Tibet and are often harvested in the winter.  They are extremely time consuming to harvest in the wild and for that reason, they tend to be rather expensive.  A elegant addition to raw chocolate and other superfood creations.
