Coconut, the fruit that grows on the coconut palm tree, is a source of minerals, fiber, protein, good fats, calcium and iron.  The proper botanical name for the coconut palm tree is Cocos (which translates from the Portuguese word coco, which means “monkey face”) Nucifera (which means “nut-bearing”).

The palms were once mostly native to Polynesia, Malaysia and Southern Asia.  Today, the Coconut Palm can be found in a vast majority of tropical climates including Hawaii, Florida and the Pacific Islands.

Coconut is adored by many due to it’s versatility in utilization and consumption.  A great addition to raw chocolate, raw food snacks, and superfood trail mixes.  Coconuts contain flesh, water, (palm) sugar and oil. The fat in coconuts in considered by many to be one the healthiest oils out there.  It is a Medium Chain Fatty Acid, with molecules that are smaller than other oils.

Smaller molecules require less energy and fewer enzymes to break them down for digestion.  They are digested more easily and rapidly with less effort of the digestive system.  Many also report that coconut oil has a positive impact on weight loss.  There are many books on the subject.  Some people enjoy coconut oil in chocolate, smoothies, desserts, salads, for pan frying, and more. Coconut oil is also commonly used in cosmetic applications as well as soaps, shampoos and toothpaste.

The rest of the coconut palm tree is also intelligently utilized.  The leaves are sometimes used for creating brooms, weaved baskets and thatches for buildings, as well as other useful objects.  The shell of the coconut is often used for bowls, cups, spoons, jewelry and carved decorative items.

The fat free water in coconuts is used by many as sports drinks to replenish electrolytes after strenuous exercise such as running, weight training, hiking and yoga.  People may also enjoy it by fermenting it with kefir grains to make a coconut water kefir, or using it as a base for superfood smoothies and elixirs.

The meat of the coconut is a creamy white color and can be eaten as is, scraped from the inside of the coconut husk.  Depending on the maturity of the coconut, it’s flesh can be soft and juicy or harder in texture and is full of healthy fats.  The meat can also be dried and shredded and eaten as a delicious raw snack.  Some people enjoy using raw coconut meat in raw superfood smoothies, pudding, pies and raw chocolate
